2000 Mardi Gras Pictures

These pictures were taken at the start of the annual boucherie in downtown Eunice the Sunday before Mardi Gras. Even before the official start of the boucherie at 10 a.m., the Cajun French Music Association was busy making cracklins.

The other pictures show Bubba Frey and Louis Pavur cleaning hair off the hog before beginning the butchering.

Later that morning, the crowd got to watch the preparation of boudin, pork stew, and other dishes. Cajun bands began playing by late morning lasting into mid-afternoon.
